The ??? Pinot from Ayoub is a true mystery wine, made with fruit sourced from unnameable but exceptionally high-end sources. Flavors are subtle and elegant, with lovely floral top notes over firm, well-balanced fruit and chewy tannins. Still quite young and compact, this wine needs another five years at a minimum to blossom. Drink 2020-2030.

Firm in texture, with powdery tannins around a taut core of white chocolate-accented currant flavors, floating serenely on the light finish. Best from 2017 through 2021. 325 cases made.

Brilliant ruby-red. Smoky red berries and cherry- cola on the pungent nose and in the mouth. Pliant and smooth, with a spicy element emerging on the back half. This very nicely balanced Pinot plays power off of vivacity and finishes sweet, gently tannic and long. Its name is not a typo: it reflects the fact that it came from three unnamed vineyards that the winery chose not to divulge.
