Sérafin prefers 100% new oak for his premier crus because of the complexity-pain grille, café, vanil-and tannic strength, that it gives to his wines, and believes that it helps the wines to keep longer. Sérafin works with many coopers, appreciating the difference that the barrels of each brings. Sérafin's wines spend from about 12 to 18 months in barrel, depending on the wine and the vintage, and are then racked out and assembled for one month prior to bottling with neither fining nor filtration. While in barrel, the wines are kept on the fine lees and are not moved.

Plum, dark cherry, and licorice accented with mace and black pepper characterize Serafin's 2007 Gevrey-Chambertin Fonteny, which combines subtle creaminess of texture with a surprisingly bright sense of fresh fruit juiciness for its vintage. Hints of dark coffee and mocha manage to offer attractive counterpoint rather than any sense of awkward contrast with the tart aspects of the fruit. The diversity as well as persistence of flavors here, along with the wine's refinement of texture, suggest to me 6-8 year's aging potential.
