He produces wines that are classic, elegant and true to their terroirs, with impressive textures, tension and bright flavors. Cultural practices of the vineyard are traditional, plowing the soil, sizes Guyot, burning branches, green harvesting if necessary, manual harvest in 25 kg petty cash openwork. All stages of winemaking are in the estate's winery (up to commercialization), severe sorting is a must and is done on a sorting table. We are still working in open wooden vats. The wines are made in the vaulted cellar dating back over 300 years where the wines are still hot down by gravity to a good marriage with wood. Red and white are high Burgundian parts (228 liters) for a period of 20/22 months for red and 18/20 months for whites with a percentage of 10% new oak. Bottling is also done to the property.
